HERRINGS WITH MUSTARD SAUCE –
Serves 4
Ingredients
- 4 large herrings
- Powdered white pepper
- Fish seasoning or all-purpose seasoning. TIP: when using seasoning don’t add more salt as all seasoning contains salt
- 1oz butter
- 1oz plain flour
- 2 teaspoons of mustard
- Pinch of curry powder
- 1 /2 pint fish stock or water
- 1 lemon cut into wedges
- Few sprigs of parsley
Preparation
Cut 2 slits on each side of each fish.
Remove head and entails from fish. Wash well.
Remove scales, cut off fins and gills. Season well, use fish seasoning or all-purpose seasoning. Quick tip – if you don’t know how to scale and prepare fish, buy from a fishmonger who will scale it for you.
Cooking
Grill the fish for ten minutes.
To make the sauce, melt butter, add flour, mustard and curry powder. Mix well and cook for two to three minutes. Remove pan from heat and add stock or water, stirring all the time. Return to heat and bring to a boil, stirring until thickened. Correct seasoning. Arrange fish on a large platter, garnish with lemon wedges or slices and parsley sprigs.
Pour your sauce into a decorative line over fish. Serve.
